Quick Stir-fry Mei Noodles with Wild Alaska Salmon

Ingredients
- 300 grams Mei noodles
- 4 tablespoon Sriracha sauce
- Juice of two limes
- 150 milliliters sweet soy sauce
- 5 tablespoon soy sauce
- 2 tablespoon sunflower oil
- 400 grams salmon filets
- 3 chopped garlic cloves
- 4 beaten eggs
- 8 spring onions, finely chopped
- 200 grams bean sprouts

- 2 stalks spring onion, chopped
- Roasted onion
Preparation

Step 1 Cook noodles and prepare sauce
Cook the noodles according to the package instructions, drain and immediately rinse with cold water and set aside. In a bowl, whisk together the lemon juice, sweet soy sauce, sriracha sauce, and regular soy sauce.

Step 2 Prepare salmon
Peel the skin off the salmon and cut it into cubes. In a large pan over medium heat, heat the oil. Fry the salmon, turning occasionally, for about 4 minutes, or until cooked through.

Step 3 Add garlic
Add the garlic and stir. Set aside. Lightly wipe the pan with a paper towel and place over high heat.

Step 4 Cook eggs and combine
Add the eggs to the pan and cook, stirring until done. Add the onion, cooked noodles, salmon, and Sriracha mixture.

Step 5 Stir-fry
Stir-fry everything for 2 minutes until all the ingredients are coated with the sauce. At the last moment, add the bean sprouts and stir well. Serve and enjoy!
