Pasta with Wild Alaska Salmon, Asparagus and Cherry Tomatoes

Ingredients
Vegetable Medley
- 8 ounces asparagus
- 8 ounces cherry tomatoes
Pasta Sauce
- 2 cups uncooked penne or rigatoni
- 2 tablespoons butter
- 2 garlic cloves, pressed
- 2 tablespoons flour
- 10 ounces vegetable broth
- 5 ounces cream cheese, cubed
Salmon
- 8 to 10 ounces wild Alaska salmon
- salt and pepper, to taste
- fresh dill tips, as needed
Preparation

Step 1 Prepare the vegetables
Trim off ends of asparagus, then cut the spears into bit-sized pieces. Halve the tomatoes.

Step 2 Prepare the pasta
Cook the pasta in a pot according to package directions. During the last 3 minutes of cooking time, add the asparagus to the cooking water. Remove the pasta and asparagus; keep warm. Drain water; wipe pot dry.

Step 3 Prepare the salmon
Add the butter to the pot over medium heat; stir in garlic. Sauté 30 seconds. Gently add the Alaska salmon. Sauté 2-3 minutes per side. Remove the salmon to a plate; keep warm.

Step 4 Prepare the sauce
Whisk the flour into the butter and brown it slightly. Stir in the broth and cream cheese until cheese is melted. Season with salt and pepper. Stir in dill tips to taste. Add the pasta, asparagus, tomatoes and salmon to the sauce. Gently mix together and heat through. Serve and enjoy.
