Ingredients
- 10 oz. canned or pouch red or pink Alaska Salmon, drained
- 1 Tbsp anchovy paste or 2 anchovies, chopped
- 2 Tbsp lemon juice
- 1 tsp garlic, minced
- ¼ tsp freshly ground black pepper
- ⅓ cup Parmesan cheese, grated
- ⅓ cup extra virgin olive oil
- 1 lb. (12 cups) romaine lettuce, roughly chopped
- 1 ½ cups croutons, prepared
- ¼ cup Parmesan cheese, shaved

Step 1 Prepare the salmon
Gently break drained Alaska Salmon into large chunks in a large bowl.

Step 2 Make the dressing
In a bowl or food processor, combine anchovy paste, lemon juice, garlic, pepper, and grated Parmesan. Slowly whisk in olive oil to blend.

Step 3 Toss the salad
In a large bowl, combine the lettuce, salmon, and dressing. Toss gently.

Portion 2 cups of salad onto each plate. Top with croutons and Parmesan cheese shavings.
