Ingredients

  • 10 oz. canned or pouch red or pink Alaska Salmon, drained
  • 1 Tbsp anchovy paste or 2 anchovies, chopped
  • 2 Tbsp lemon juice
  • 1 tsp garlic, minced
  • ¼ tsp freshly ground black pepper
  • ⅓ cup Parmesan cheese, grated
  • ⅓ cup extra virgin olive oil
  • 1 lb. (12 cups) romaine lettuce, roughly chopped
  • 1 ½ cups croutons, prepared
  • ¼ cup Parmesan cheese, shaved

Preparation

  1. Step 1 Prepare the salmon

    Gently break drained Alaska Salmon into large chunks in a large bowl.

  2. Step 2 Make the dressing

    In a bowl or food processor, combine anchovy paste, lemon juice, garlic, pepper, and grated Parmesan. Slowly whisk in olive oil to blend.

  3. Step 3 Toss the salad

    In a large bowl, combine the lettuce, salmon, and dressing. Toss gently.

  4. Step 4 Serve

    Portion 2 cups of salad onto each plate. Top with croutons and Parmesan cheese shavings.

  5. Step 5 Tips:

    • For convenience, use bottled Caesar dressing.
    • To make Parmesan shavings, use a vegetable peeler to create thin slivers.
    • Add freshly ground black pepper for extra flavor.
