Marinated Alaska Sockeye Salmon with Celery, Ginger and Sichuan Peppercorn

Ingredients
- 300 grams Alaska sockeye salmon, skin removed and sliced into ¼ thin pieces
Marinade
- 70 grams lemon juice
- 70 grams lime juice
- 30 grams orange juice
- 30 grams soy sauce
- 20 grams sake
- 4 grams salt
- 50 grams celery, thinly sliced
- 15 grams ginger, thinly sliced
Garnish
- Celery leaves for garnish
- 3 grams ground Sichuan peppercorn
- 10 grams olive oil
- Zest of 1 orange

Preparation

Step 1 Step 1: Make Marinade
Mix all marinade ingredients together and set aside.

Step 2 Step 2: Marinate Salmon
Place salmon in container and add marinate. Cover and refrigerate for 40 minutes.

Step 3 Step 3: Plate and Serve
Remove the salmon from the marinade and place on a paper towel to dry. Once dry, scatter ¼ of the salmon randomly on each plate. Top with ¼ of celery from the marinade. Lightly dress salmon with marinade and olive oil. Garnish with celery leaves, orange zest, and a sprinkle of Sichuan peppercorns.
