Ingredients

  • 300 grams Alaska sockeye salmon, skin removed and sliced into ¼ thin pieces
  • Marinade

  • 70 grams lemon juice
  • 70 grams lime juice
  • 30 grams orange juice
  • 30 grams soy sauce
  • 20 grams sake
  • 4 grams salt
  • 50 grams celery, thinly sliced
  • 15 grams ginger, thinly sliced
  • Garnish

  • Celery leaves for garnish
  • 3 grams ground Sichuan peppercorn
  • 10 grams olive oil
  • Zest of 1 orange

Preparation

  1. Step 1 Step 1: Make Marinade

    Mix all marinade ingredients together and set aside.

  2. Step 2 Step 2: Marinate Salmon

    Place salmon in container and add marinate. Cover and refrigerate for 40 minutes.

  3. Step 3 Step 3: Plate and Serve

    Remove the salmon from the marinade and place on a paper towel to dry. Once dry, scatter ¼ of the salmon randomly on each plate. Top with ¼ of celery from the marinade. Lightly dress salmon with marinade and olive oil. Garnish with celery leaves, orange zest, and a sprinkle of Sichuan peppercorns.
