Ingredients

  • 2 Alaska sole fillets
  • 2 (8-inch) flour tortillas (wraps)
  • 2 teaspoons all-purpose flour (for dredging)
  • 1 avocado, diced
  • 1 tablespoon crème fraîche (or sour cream)
  • 1 medium carrot, peeled and grated
  • 6–8 cherry tomatoes, quartered
  • 2–3 lettuce leaves, shredded
  • 2 tablespoons shredded cheese (cheddar, mozzarella, or your choice)
  • Salt and freshly ground black pepper, to taste
  • 1–2 tablespoons cooking oil (vegetable or olive oil)

Instructions

  1. Step 1 Prepare the Fish

    • Pat the sole fillets dry with paper towels.

    • Season both sides with salt and pepper.

    • Lightly coat with flour, tapping off any excess.

  2. Step 2 Cook the Fish

    • Heat oil in a skillet over medium heat.

    • Cook the fillets for about 2–3 minutes per side, until golden brown and crisp.

    • Drain on paper towels and slice into strips.

  3. Step 3 Prep the Veggies

    • Grate the carrot.

    • Dice the avocado.

    • Quarter the cherry tomatoes.

    • Shred the lettuce leaves.

  4. Step 4 Warm the Wraps

    Heat tortillas in a dry skillet for 20–30 seconds per side until pliable.

  5. Step 5 Assemble the Wraps

    • Spread 1/2 tablespoon of crème fraîche in the center of each tortilla.

    • Layer with lettuce, tomato, avocado, and carrot.
