Alaska Wild Salmon Teriyaki Bowl

Wild Alaska salmon is marinated in teriyaki sauce and served over cauliflower rice with avocado, cucumber, spinach sprouts, salmon roe, and fresh vegetables.

Ingredients

  • For the Teriyaki Salmon

  • 14 ounces Wild Alaska salmon fillets
  • 6 tablespoons soy sauce
  • 3 tablespoons mirin or sake
  • 1 tablespoon powdered sugar
  • 10 slices fresh ginger
  • 2 green onions, thinly sliced
  • 1 tablespoon vegetable oil
  • Black pepper, to taste
  • For the Bowl

  • 4 tablespoons Alaska salmon roe
  • 1/2 head cauliflower
  • 2 cups spinach sprouts
  • 1 avocado, sliced
  • 3 ounces corn kernels (about 1/2 cup)
  • 1/4 cucumber, thinly sliced

Preparation

  1. Step 1 Make the Teriyaki Sauce

    • In a small saucepan, combine the soy sauce, mirin, and powdered sugar.
    • Bring to a boil, stirring until the sugar dissolves.
    • Remove from the heat and allow the sauce to cool.

     

  2. Step 2 Marinate the Salmon

    • Place the Wild Alaska salmon fillets in a shallow dish.
    • Pour half of the cooled teriyaki sauce over the salmon.
    • Marinate for 30 minutes.

     

  3. Step 3 Prepare the Vegetables

    • Finely grate or pulse the cauliflower in a food processor until it resembles rice.
    • Cook the cauliflower rice in lightly salted simmering water for 2 to 3 minutes.
    • Drain well and allow to cool slightly.
    • Slice the green onions, cucumber, and avocado.

     

  4. Step 4 Cook the Salmon

    • Heat the oil in a large skillet over medium heat.
    • Add the ginger slices and green onions and cook for 1 minute.
    • Add the salmon and cook until lightly browned and nearly cooked through.
    • Pour 4 tablespoons of the remaining teriyaki sauce over the salmon.
    • Add the spinach sprouts, cover, and cook until the salmon flakes easily with a fork.

     

  5. Step 5 Assemble the Bowls

    • Divide the cauliflower rice between two serving bowls.
    • Top with the teriyaki salmon and spinach sprouts.
    • Arrange the cucumber, corn, avocado, and green onions around the bowl.
    • Spoon the Alaska salmon roe over the top.

     

  6. Step 6 Serve

    • Drizzle with the remaining teriyaki sauce.
    • Serve immediately.
