Ingredients

  • For the Alaska Pollock

  • 14 ounces Alaska pollock fillets, cut into strips
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill, chopped

  • For the Avocado Cream

  • 1 ripe avocado
  • 3 tablespoons cream cheese
  • 1 teaspoon lemon juice
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • For the Bruschetta

  • 1 French baguette (about 16 ounces), sliced into 8 pieces
  • 1 tablespoon olive oil or butter, for toasting

Preparation

  1. Step 1 Make the Bruschetta

    • In a medium bowl, combine Alaska pollock, lemon juice, olive oil, dill, salt, and pepper. Toss gently to coat and set aside while preparing the remaining ingredients.
    • In a small bowl, mash the avocado with cream cheese, lemon juice, salt, and pepper until smooth and creamy.
    • Heat a large skillet over medium heat. Add olive oil or butter and toast baguette slices until golden brown on both sides, about 1 to 2 minutes per side. Remove and set aside.
    • In the same skillet, cook the Alaska pollock strips for 3 to 4 minutes per side, or until the fish is opaque and flakes easily with a fork.
    • Spread avocado cream evenly over each toasted baguette slice.
    • Top with Alaska pollock, diced tomatoes, and fresh sprouts.
