Ingredients

  • Salad

  • 6 slices Alaska smoked salmon
  • 3 handfuls field lettuce
  • ½ fennel bulb, thinly sliced
  • ½ grapefruit, peeled and segmented
  • ½ orange, peeled and segmented
  • ½ avocado, sliced
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped
  • Pine nuts
  • Dressing

  • 1 tsp mustard
  • 1 tsp honey
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • Salt and freshly ground black pepper, to taste

Preparation

  1. Step 1 Dressing

    In a small bowl, whisk together mustard, honey, apple cider vinegar, olive oil, and lemon juice. Season with salt and pepper. Set aside.

  2. Step 2 Salad

    Cut smoked salmon into bite-size pieces.
    Slice citrus into segments if not already prepared.
    Arrange salad on plates in the following order: field lettuce, fennel, grapefruit and orange segments, avocado slices, smoked salmon.
    Finish with parsley, pine nuts, a crack of black pepper, and drizzle with dressing just before serving.
