Ingredients

  • 1 cup sushi rice
  • 2 tablespoons rice vinegar
  • 2 teaspoons sugar
  • 4 slices Alaska smoked salmon, cut into pieces
  • ½ avocado, mashed with a splash of lemon juice
  • ½ red onion, chopped
  • ½ lemon, juiced
  • 2 tablespoons fried onions
  • Optional: sesame seeds, hot sauce, roasted onions

Preparation

  1. Step 1 Prepare the rice

    Cook sushi rice according to package instructions. In a small bowl, mix rice vinegar and sugar until dissolved. Let the rice cool, then stir in the vinegar mixture.

  2. Step 2 Make the waffle base

    Grease a waffle iron and spread the sushi rice evenly. Cook for about 8 minutes, or until crispy and golden.

  3. Step 3 Assemble the toppings

    Top the crispy rice waffles with mashed avocado, chopped red onion, and smoked salmon.

  4. Step 4 Finish and serve

    Drizzle with lemon juice and garnish with fried onions. Add sesame seeds, hot sauce, or roasted onions if desired.
