Ingredients

  • Seafood

  • 1–2 tins of Alaska salmon (plain or smoked, pink or sockeye)
  • Salmon spread or pâté (optional or make-ahead)
  • Cheese & Crackers

  • A wedge of creamy blue cheese
  • A wedge of cranberry-studded cheddar (or another flavored firm cheese)
  • Sliced cheese (for layering)
  • Assorted crackers and sliced bread
  • Fruits & Veggies

  • 1 bunch red grapes
  • 1 small bowl green olives
  • 1 small bowl pickles and cocktail onions
  • Fresh cherry tomatoes
  • Fresh plums or stone fruit slices
  • Extras & Accents

  • Whole grain mustard
  • Roasted red peppers or marinated peppers
  • Pickled zucchini rounds (or pickled veggies of choice)
  • Pistachios or mixed nuts
  • A seasonal fruit chutney or berry jam

Preparation

  1. Step 1 Prepare the seafood

    • Open tins of salmon, draining lightly if needed. Flake pink salmon into a small dish, removing bones and skin, and leave others whole for variety.

    • If using salmon spread or pâté, spoon into a small bowl.

  2. Step 2 Arrange the cheeses

    • Slice firm cheeses into wedges or sticks. Leave softer cheeses whole for guests to spread.

    • Place cheeses on different corners of your serving board.

  3. Step 3 Add crackers & bread

    • Fan crackers around one cheese section.

    • Layer slices of rustic bread in a basket or on the board with a napkin.

  4. Step 4 Fill in with fruits & veggies

    • Add grapes in a cluster for a pop of color.

    • Place bowls of olives, pickles, and cherry tomatoes.

    • Scatter plums or stone fruit slices for brightness.

  5. Step 5 Finish with extras

    • Place mustard, chutney, or jam in small ramekins.

    • Add bowls of nuts for crunch.

    • Use pickled veggies and peppers to fill empty spaces and balance flavors.

  6. Step 6 Serve & enjoy

    Encourage guests to mix and match: salmon on bread with mustard, cheese with chutney, or salmon spread with crackers.
