Quick Wild Alaska Pink Salmon Chowder
This quick Alaska salmon chowder is creamy, smoky and just right for a cozy wintertime meal. Make sure to use the liquid from the canned salmon - it’s packed with flavor and nutrients!

Ingredients
- 1 can (14.75 oz.) Alaska Pink salmon
- 1 Tablespoon cooking oil (or butter alternative)
- 1 small onion, chopped
- 1 Tablespoon flour
- 3 cups milk – 2% low fat
- 1 medium potato, diced (1/2 inch cubes)
- 1 cup frozen corn kernels, without salt
- 1 teaspoon dried thyme, dill or other herb
- 1/2 teaspoon Black pepper
- 1/4 cup diced onions, or chopped scallions, divided for garnish

Insturctions

Step 1 Prepare the salmon
Drain the salmon, saving liquid for the soup; don’t discard skin and bones (if any) – they provide calcium and healthful Omega-3 fatty acids. Break salmon into chunks and set aside.

Step 2 Cook the onions
Melt butter alternative or oil in a 2-quart saucepan over medium heat. Add onions; cook and stir 5 minutes until translucent, taking care not to burn.

Step 3 Thicken chowder and simmer
Add flour; cook 1 minute, stirring occasionally. Add milk and salmon liquid, bring to a low boil. Stir in potatoes, corn, seasonings. Return to simmer and cook 5 minutes. Stir in salmon; heat through.

Step 4 Serve and garnish
Add chowder to bowls and sprinkle with remaining onions, scallions, parsley or other garnish.

Step 5 Options (avoid if on salt restricted diet)
- Spicy Variation: Add Cajun, southwest or other seasoning of your choice and add red pepper flakes to taste.
- Add 2 tablespoons bacon crumbles during cooking for added flavor
- Serve with oyster crackers, crumbled saltine crackers or crumbled tortilla chips.
