Pan-Fried Alaska Pink Salmon with Everything Bagel Crust

Ingredients

  • Everything bagel seasoning

  • ● ¼ cup sesame seeds
  • ● ¼ cup poppy seeds
  • ● ¼ cup dried minced onion
  • ● ¼ cup dried minced garlic
  • Salmon

  • ● 3 tablespoons canola or vegetable oil, divided
  • ● ¼ cup capers, drained
  • ● 1 cup labneh
  • ● Finishing salt, such as Maldon
  • ● 1 pint kettle-style potato chips
  • ● 1 cup fresh dill fronds
  • ● ½ white onion, thinly sliced
  • ● 4 Alaska pink salmon fillets, skin removed (about 4-6 ounces per fillet)
  • ● Kosher salt
  • ● Everything bagel mix
  • ● Good olive oil, for serving
  • ● Lemons, for serving

Preparation

  1. Step 1 Prep the seasoning.

    In a large heavy skillet over medium-high, heat the sesame seeds, poppy seeds, dried minced garlic, and dried minced onion, stirring constantly until it smells fragrant like a bagel shop, 3-5 minutes. Spread out ingredients on a plate or tray to cool quickly. Set aside.

  2. Step 2 Fry the capers

    In a small frying pan, heat 1 tablespoon of oil over medium-high. Add the capers and pan fry until golden, stirring occasionally. Place fried capers on a paper towel-lined plate and set aside.

  3. Step 3 Prepare the salmon fillets.

    Pat dry the salmon fillets with paper towels. Season both sides of each fillet liberally with kosher salt, then press one side of each fillet into the everything bagel seasoning, being sure to completely coat the surface. Repeat with remaining salmon fillets.

  4. Step 4 Prepare the plates before cooking salmon

    In the center of each plate, add ¼ cup of labneh, spreading it out into a thin layer and garnishing it with a pinch of finishing salt. Arrange a few potato chips, lots of dill sprigs, slices of white onion, and a tablespoon of fried capers around the labneh on each plate. Set aside the plates while cooking the salmon.

  5. Step 5 Pan-fry the salmon

    Add 2 tablespoons of oil to a large, heavy bottomed skillet over medium-high heat until it shimmers. Place each fillet, seasoning side down, into the pan then turn down the heat to medium. Cook until the everything bagel mixture is browned but not burnt, about 1 minute. Carefully flip the fish and cook until just opaque throughout, about 2-4 minutes depending on the thickness of the fillets. During cooking, push to the side any seeds that have separated from the fillets to prevent them from burning.

  6. Step 6 Plate and serve

    Place a salmon fillet in the center of each plate; finish with a healthy drizzle of good olive oil and fresh lemon juice.
