Open-faced Pink Salmon Salad Sammies
Serve a quick, healthy lunch your kids are sure to love! A simple salmon salad spread on whole-grain bread has just the right flavors to please a child’s palate.

Ingredients
- 2 cups canned or cooked Alaska pink salmon
- ½ cup mayonnaise
- 3 tablespoons plain Greek yogurt
- 1 celery stalk, chopped finely
- ½ teaspoon garlic powder
- 4 slices of whole-grain bread
- Baby carrots, cucumber slices and grape tomatoes, for serving

Step 1 Prepare the salmon salad
Add the salmon to a medium mixing bowl and flake apart with a fork, removing any skin or bones. Add the mayonnaise, yogurt, celery and garlic powder and mix until well combined.

Step 2 Prepare the sandwiches, plate and serve
Spread ¼ of the salmon salad onto one slice of bread. Cut in half diagonally and place on a plate. Repeat with remaining salad and bread slices. Serve with baby carrots, cucumber slices and grape tomatoes on the side.
