Ingredients
For the pesto:
- ½ avocado
- 1 handful basil leaves
- 1 cup fresh spinach
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 tablespoon pine nuts
- Black pepper, to taste
For the pasta and salmon:
- 1 salmon fillet
- 1 cup pasta of choice
- 1 teaspoon olive oil

Step 1 Make the pesto
In a food processor, blend the avocado, basil, spinach, Parmesan, olive oil, garlic, pine nuts, and black pepper until smooth. Set aside.

Step 2 Cook the salmon
Heat a pan over medium heat and drizzle with olive oil. Cook the salmon fillet for about 3 minutes per side until lightly seared but still tender inside. Remove from the pan and cut into cubes.

Step 3 Cook the pasta
Bring a pot of salted water to a boil and cook the pasta according to package instructions. Drain well.

Step 4 Assemble the dish
Toss the pasta with the avocado pesto until evenly coated. Top with salmon cubes and sprinkle with extra pine nuts and Parmesan shavings. Serve immediately.
