ALASKA KING SALMON FILET “OSCAR”

Chef Keoni Chang got third place for his recipe, Alaska King Salmon Filet “Oscar”. He swapped out the traditional beef in favor of a wild Alaska salmon filet, and opted for Alaska King crab to enhance the flavor and the presentation of this unique dish.“I loved thinking about how to replace other proteins with seafood,” said Chef Chang. “I like working with wild Alaska salmon it eat only what nature provides. The high fat content in the King salmon makes it easy to create a flavorful dish. And béarnaise sauce goes with everything. This recipe is special, but I also wanted the average home cook to be able to prepare it for a special occasion.”  Chef Chang is the Corporate Chef at Foodland Super Market. Ltd. in Hawaii. Originally from Oahu, he attended the Kapi’olani Community College culinary arts program and later studied at the Culinary Institute of America in New York. He worked as an apprentice at the Greenbrier in West Virginia, a chef at Windows on the World at the World Trade Center, executive Sous Chef at the Eiffel Tower Restaurant at the Paris Hotel in Las Vegas and chef at Ryan’s Restaurant in Hawaii before joining Foodland in 2004. In 2012, Chef Chang was named “Grand Chef” of the inaugural Supermarket Chef Showdown. He has also been a featured chef at the Hawaii Food and Wine Festival and most recently appeared on the CBS show “Recipe Rehab.”
