In Chapter 15 of 'John Ash Cooking One on One Private Lessons in Simple, Contemporary Food from a Master Teacher', Ash talks about salmon. He describes it as "America's favorite fish " and even goes so far as to say "...if I had to choose a last meal... it would be a piece of roasted or grilled wild-caught king salmon ".
Ash informs his readers they can be assured they are buying wild-caught salmon if they are buying Alaska Salmon. He adds: "there are no fish farms in Alaska " and refers to the Alaska's law prohibiting salmon farming in order to protect Alaska's wild stock. He also notes "the state's [Alaska's] 40-year-old programs, which monitor every species to ensure that sufficient numbers escape capture to maintain the population, are a model for fishery management around the world. "
