The last word in selling Alaska Seafood always belongs to your waitstaff. A staff familiar with Alaska's unique qualities is invaluable for increasing sales and creating repeat business.

  • Your waitstaff should know what makes Alaska Whitefish preferable to whitefish from other sources.
  • Waitstaff should be able to explain the unique, sometimes subtle differences between the various Alaska species, including flavor, color, texture and preparation techniques.
  • A trained waitstaff will always be ready to answer any questions pertaining to Alaska Whitefish.
  • Encourage your waitstaff to use descriptors. For example, "Try our delicious Alaska Cod, sautéed in lemon and herb butter" will stimulate more impulse sales than "Try our seafood special."
  • Create incentive programs by awarding a gift certificate to the staff member who sells the most Alaska Seafood entrées or appetizers during an Alaska Seafood promotion.
