2001 Symphony of Seafood Winners & Their Recipes Giving a "thumbs up" to all 18 products entered into this year's Alaska Symphony of Seafood new-products contest, seven official judges and two executive chefs share their enthusiasm following the five-hour official tasting, which was held last January in Girdwood, Alaska. Alaska's Annual Symphony of Seafood Event is the nation's largest new-products contest for foodservice, retail and smoked products made from Alaska Seafood. This year's contest judged 18 new Alaska Seafood product entries for taste, texture, packaging and marketability. The winners were: Kake Foods took first place in the foodservice category for their innovative yet versatile "Salmon Sausage Pizza Topping." Trident Seafoods Corporation took home second place for their tasty "Trident Tabasco® Cod Fillet Tenders" as well as won the "People's Choice" award for its "Sealegs® Extremers Seafood & Crab Bites." Third place was awarded to American Seafoods International
for their scrumptious "Southwestern Glaze Ocean Cut." As the first place winner, Kake Foods earned exhibit space at the 2001 International Boston Seafood Show. All top three winners in the foodservice category earned the right to use the Symphony Winner sticker on packaging and in promotional materials. Try the Winning Recipes Out for Yourself! Salmon Sausage Pizza Topping by Kake Foods, Inc. Trident Tabasco® Cod Fillet Tenders Using Alaska Cod, these natural Alaska Cod fillets are tumbled in a bold Tabasco brand flour coating, giving them a "big & bold" flavor profile for those who like it hot! The breading, shape and appearance as well as the natural tumbled coating technique used in its creation is unique to the seafood industry. They should be kept frozen and cooked from the frozen state by deep frying them at 350 degrees Fahrenheit for three-and-one-half to four minutes. They can be served with a Ranch dressing or Blue Cheese along with a cold glass of lemonade. Other varieties of Alaska Seafood can be used in place of Alaska Cod such as Alaska Pollock or Alaska Flounder. Sealegs® Extremers Seafood & Crab Bites (People's Choice) by Trident Seafoods Corporation These bite-sized crunchy appetizers offer the great taste of SEALEGS® brand surimi seafood and crab blend with American cheese, helping operators capitalize on the finger food concept. Using Alaska Pollock surimi seafood and snow crab meat, they are perfect for serving with a favorite dipping sauce. They should be kept frozen until use and deep fried at 350 degrees Fahrenheit for 2.5 minutes. Southwestern Glaze Ocean Cut from American Seafoods International Featuring Alaska Pollock, this oven-ready, glazed product offers a zesty southwestern flavor profile that bakes off in minutes, with no thawing required. It offers an innovative flavor profile for fish and Ocean Cut is available in many varieties and flavors. With a suggested serving size of 4.5 ounces, this product should be baked frozen in a single layer on a sheet pan in a conventional or convection oven.
