CIA 2001

2001 Alaska Seafood Seminar a Success for Executive Chefs!

Some of America's greatest executive chefs gathered together for the 2001 Alaska Seafood Seminar, hosted by the Alaska Seafood Marketing Institute (ASMI) and held at the Culinary Institute of America (CIA) in Napa Valley on May 1 - 4, 2001.

The seminar attracted 18 executive chefs and other key decision-makers in the foodservice industry, including representatives from Disney's Wilderness Lodge, Sea World Adventure,
P.F. Changs, Lund's/Byerly's Market, Sodexho Marriott Services, ACF, The California Sushi Academy, Denny's restaurants and Royal Caribbean Cruise Lines.

The three-day seminar provided attendees with useful tips about identifying and working with the various Alaska Seafood species -Salmon, Whitefish and Shellfish. There was also time for each chef to prepare and sample Alaska Seafood in a variety of different ways, including fun demonstrations where chefs were split into groups and assigned to develop recipes that were influenced by Mediterranean, Latin American, East Asian and Indian flavors.

Instruction was provided by Alaska Seafood Seminar veterans Chef Wayne Ludwigsen, former Executive Chef at Ray's Boathouse in Seattle, WA, and Chef Lars Kronmark of the CIA. Alaska fishermen Jay Stinson and Randy Rice also spoke, providing information and answers to questions about harvesting and quality-control.
