Elegant Recipe Book Features Menu Ideas for Catering, Helping Restaurants & Caterers Achieve Success in a Competitive Business

JUNEAU, AK (July 17, 2001) - Filled with 24 scrumptious catering recipes, "The Elements of Style: Creative Catering with Alaska Seafood" is a 48-page, upscale recipe book designed to help restaurants and caterers, or those wanting to get into the catering business, take advantage of this booming industry while meeting consumers' requests for diverse foods with exciting themes.

"The Elements of Style: Creative Catering with Alaska Seafood" recipe book was developed by the Alaska Seafood Marketing Institute (ASMI) in order to help foodservice operators plan a variety of catering menus from simple, healthy plated entrées to unique appetizers and gourmet buffets. The book is recipe-intensive and focuses on two types of catering - plated, where servers pass food and beverages around using trays, as well as buffet, where the food is located in a central area or spread out at various stations.

The 24 recipes feature a variety of Alaska Seafood species and include culinary delights such as Cedar-Scented Alaska Salmon with Soft polenta, Corn Pudding and Pumpkin Seed Vinaigrette Cilantro, Mint Crusted Alaska Cod with a Warm Cabbage Slaw and Dipping Sauce, and Roasted Alaska Halibut with Clams and Sake Broth. In addition to recipes, one page of the book is dedicated to a list of helpful tips in how to maintain the freshness of seafood. "The Elements of Style: Creative Catering with Alaska Seafood" is being unveiled this week during the 2001 National Association of Catering Executives trade show.

"Due to Alaska Seafood's versatility, natural flavor and healthful qualities, it is ideal for all types of ethnic cuisine, culinary styles as well as budgets. Therefore we wanted to design an elegant recipe book that showcases these characteristics and suggest to chefs additional ways in which to incorporate Alaska Seafood into their catering menus," said Claudia Hogue, ASMI's foodservice program director.
