FOR IMMEDIATE RELEASE JUNEAU, AK (February 23, 2001) - Starting March 1, Alaska Snow Crab will be available for foodservice operators to take advantage of this year's prices, which are 10 - 15 percent below 2000 prices, making them a great value to menu for Lent. With an average weight of one to three pounds, Alaska Snow Crab is renowned for its size and bright red shell color as well as its sweet, subtle flavor and delicate texture. Alaska Snow Crab is ideal for a variety of menus, from full-service family-style to casual and specialty theme restaurants. As a means to ensure Alaska Snow Crab yields a higher meat content than its counterparts, harvesting takes place in January and February. Then, once caught, Alaska Snow Crab is transported live to processing plants where it is cleaned, cooked, and frozen immediately to preserve its fresh-caught, natural flavor and texture. Due to continued strict resource management efforts, the Alaska Snow Crab harvest closed at 25 million pounds, showcasing Alaska's on-going commitment to preserving and rebuilding its natural resources. For more information, foodservice operators can contact the Alaska Seafood Marketing Institute (ASMI) for promotional and educational materials, including consumer and foodservice recipes, as well as a Suppliers Directory free of charge. Operators can also click here to order materials directly from the ASMI catalog. -30-
