"Beyond Fish 'n Chips" Offers Fresh Ideas for Adding Alaska Seafood to the Take-Out Mix, While Reducing Labor

JUNEAU, AK (February 20, 2001) - Whether seeking menu ideas for tableside service or finding new ways to drive takeout business, foodservice operators now have another resource for fresh menu ideas, all of which reduce kitchen prep time.

A new recipe book titled "Beyond Fish 'n Chips" is a collection of chef-developed recipes that offer ideas about how to use value-added Alaska Seafood products, thereby creating fresh new, labor-saving menu ideas.

The book offers recipes that creatively use value-added Alaska Seafood products such as Smoked Alaska Salmon, pre-seasoned, breaded Alaska Crab cakes, Alaska Halibut fillet portions and Alaska Popcorn Fish pieces. With these value-added Alaska Seafood products, foodservice operators can create scrumptious recipes like the Chinese Crab Cake Salad, Baja-laska Halibut Sandwich and "Mocki Sushi" - minus the sushi chef, all of which are featured in this recipe book.

"Beyond Fish 'n Chips" was developed by the Alaska Seafood Marketing Institute (ASMI) in an effort to help operators, including restaurants and service delis, to build upon their existing seafood menu without incurring added labor time.
