foodservice segments combining price point, good meat color and delicate
flavor.
- Known for its firm pink flesh, moderate fat content and delicate
flavor.
- This species is in high-demand by the foodservice industry and
is used in almost every segment.
- Average weight is eight pounds and grow to be 25 to 27 inches long.
- They are available as whole fish, steaks and fillets and are sold
canned and smoked as well as fresh and frozen. Keta Salmon have a
lower oil content than other salmon and are very good for smoking.
