With its orange-red flesh, firm texture and delicate flavor, Silvers
have gained wide consumer acceptance. Their size, relatively high fat
content and excellent color retention properties make them popular in
both frozen and smoked forms.
- Second largest of the species.
- Average weight is 12 pounds and range from 25 to 35 inches in length.
- Known for an orange-red flesh, superior texture and excellent eye
appeal.
- One of the most commonly used species in the foodservice arena.
- Silvers are most often marketed as whole fish, steaks and fillets.
