“The Alaska Seafood Spice Pantry Online”
The Alaska Seafood Marketing Institute And The Culinary Institute Of America Team Up On The Web To Share Alaska Seafood With Foodservice Professionals

Juneau, Alaska, November 28, 2007 – In their continuing effort to partner with foodservice operators and provide them with the tools necessary to respond to the changing needs and desires of their patrons, the Alaska Seafood Marketing Institute (ASMI) has teamed up with the Culinary Institute of America (CIA), to announce the newest addition to their interactive culinary library—a new ProChef website dedicated to spicing up Alaska seafood.  
 
Flavor first: The Next Big Thing In Flavor Destinations
Latin, Asian, and Mediterranean—the latest CIA ProChef website unlocks a pantry full of global herbs and spices, bringing the flavors of the world to Alaska seafood. Herbs and spices are broken down by form, flavor, and use. Streaming videos provide educational information on Alaska seafood species including harvesting methods, product handling, and seasonality. On-trend recipes and contemporary cooking techniques are complemented with chef demos, including Alaska Halibut with Ras Al Hanout from Morocco, and Alaska Black Cod Poached in Spiced Tamarind Sauce from India. A market basket workshop video offers users a unique opportunity to go behind the scenes of the Alaska Seafood Seminar held last spring at the CIA Greystone, to witness how chefs around the country spice up wild and sustainable Alaska seafood.

Top chefs in all foodservice segments are using Alaska seafood, as 59% of all seafood produced in the United States comes from Alaska. Chefs and consumers prefer Alaska seafood because it is wild, sustainable, and tastes so good. Alaska is the pioneer of sustainability. Since acceptance into the Union in 1959, Alaska’s Constitution has mandated that “fish…be utilized, developed and maintained on the sustained yield principle.” This long-term dedication to sustainability has resulted in keeping the world stocked with a continuous, ever-replenishing supply of wild seafood. Indeed, Alaska's effective and precise fisheries management practices are considered a model for the world.  
The Alaska Seafood Marketing Institute is the State of Alaska’s official seafood marketing arm. It is a public agency of the State of Alaska, funded by the Alaska seafood industry and federal grants.
