Seattle, Washington. April 30, 2008 – Rockfish Seafood Grill, a fourteen-unit chain with locations in Texas and North Carolina will be featuring a “Go Wild” promotion with Alaska halibut and salmon beginning April 28 – June 6, 2008. The new menu items will include:
- Grilled Alaskan Halibut - Garlic whipped potatoes with sautéed baby bok choy and a Creole cream sauce
- Pan Seared Alaskan Halibut - Wild rice, grilled marinated portabella mushroom, sautéed asparagus and a roasted garlic lemon butter sauce
- Grilled Alaskan Salmon Sandwich - Toasted Ciabatta roll with lettuce, tomatoes and red onion. Served with fries, cole slaw and a caper dill tartar sauce
The Rockfish motto, “Great seafood, not a lot of clams,” is something the chain takes seriously. “We are very excited about this promotion, and the opportunity to offer our guests something different from our core menu. Guests will be able to trade-up with high-end Alaska halibut and salmon at a competitive price, all in our comfortable lodge setting. We anticipate that many families will treat their moms with these special Alaska seafood dishes this Mother’s Day,” says Aaron Horton, Director of Marketing.
To promote the new menu items, Rockfish will be featuring radio spots, table tents, e-newsletters, and menu chalkboard placement. Rockfish staff will receive specific training relative to the promotion to ensure its success, including pre-shift meetings and tastings to enhance their existing seafood knowledge. In addition, Rockfish team members receive comprehensive species guides for all promotional and regular menued seafood items, providing information on preparation, flavor, texture, season, and origin.
Since acceptance into the Union in 1959, Alaska’s Constitution has mandated that “fish…be utilized, developed and maintained on the sustained yield principle.” This long-term dedication to sustainability has resulted in keeping the world stocked with a continuous, ever-replenishing supply of wild seafood.
