Seattle, Washington, May 16, 2007 – If there is one thing that today’s menus have in common it’s flavor – big, bold, uncompromising flavor. Consumers want it and chefs know it. With this in mind, the Alaska Seafood Spice Pantry guide was created with recipes developed by The Culinary Institute of America (CIA) as an industry service to the Alaska Seafood Marketing Institute (ASMI).
The guide, which boasts 84 CIA-developed recipes, plus two flavor affinity matrices, demonstrates how wild and sustainable Alaska Seafood is a natural canvas for helping operators meet their patron’s desire for world flavors and ingredients. The rich cultural destinations that inspired the recipes include many regions within Latin America, Asia and the Mediterranean.
To help operators gain a better understanding of today’s ethnic flavors and how they work well with wild Alaska Seafood the two matrices include: a spice matrix and a species matrix. The spice matrix offers 50 different herbs and spices found common to Latin America, Asia and the Mediterranean. The species matrix profiles flavor, texture, oil content and average size of 14 of the most common Alaska Seafood species.
