2005 Worlds of Flavor "Ancient Fires, World Flavors and the Future of American Cooking"
The Alaska Seafood Marketing Institute (ASMI) sponsored the Culinary Institute of America's "Ancient Fires, World Flavors and the Future of American Cooking" conference, held November 3rd - 5th at the Culinary Institute's Greystone California campus. These guest faculty members led seminars and cooking demonstrations to the sold-out audience of 600 senior-level chefs, restaurant operators and other influential foodservice professionals.

ASMI was privileged to work with world-renowned Vietnamese chef, Mai Pham. Chef Pham developed three succulent recipes using Alaska Seafood including: Hanoi-style Alaska Scallops with Baby Dill and Rice Noodles, Thai Green Mango Salad with Alaska Salmon and Alaska Black Cod with Vietnamese Dipping Sauces. Chef Pham prepared these recipes at ASMI's opening reception and for the cooking demonstration at the Big Fish seminar.

She hosted the Food Network special "My Country, My Kitchen: Vietnam;" writes a food column for The San Francisco Chronicle, for which she won the 1998 IACP Bert Greene Award for Distinguished Journalism; and is the author of many acclaimed Vietnamese cookbooks.
