Alaska Seafood and Ram Restaurants Pair Up for a Wild Seafood Celebration!
The Alaska Seafood Marketing Institute (ASMI) and Ram Restaurants are gearing up for a Wild Seafood Celebration featuring "wild natural delicacies from Alaska and the Pacific." From May 15th through June 24th, patrons at 21 casual restaurant concepts in Illinois, Indiana, Colorado, Wyoming, Idaho, Oregon and Washington will enjoy a selection of menu items featuring wild and natural Alaska Halibut, Cod, and Sockeye Salmon.

Emphasis on this year's promotion is on wild, natural and sustainable. Executive Chef James Cassidy is passionate about wild and sustainable seafood. Having traveled recently to Alaska with his regional chefs, he met some of the fishermen and processors, observed the facilities and learned all about Alaska's strict fisheries management policies and harvesting quotas. He states, "We continue to serve Alaska Seafood because of the freshness, health benefits, superior quality and outstanding flavor. Featuring wild and sustainable seafood is important to us, and Alaska Seafood has shown to be a model of sustainability for the world."

Featured menu items will range from appetizers, sandwiches, salads, and main entrées. Some of the mouth-watering menu selections will include an Alaska Cod Po-Boy Sandwich, Fire Grilled Wild Alaska Sockeye Salmon, and a Wild Alaska Parmesan Halibut with Potato Cakes. Also, as a recognized and award-winning craft brewery (Ram Restaurants have won 28 awards for their innovative and distinctive hand-craft ales and lagers), a special aspect of the promotion is the pairing of these menu items with select beers. For example, a tempting Pan Seared Wild Alaska Sockeye Salmon, marinated in fresh herbs and served with spring pea and leek risotto and asparagus, is nicely complemented with The Ram's signature Big Horn Blonde ale.

The Wild Seafood Celebration promotion will feature a special stand-alone menu with photos of each new dish and will be advertised through a radio and newspaper campaign and in-store signage. Additionally, 75,000 patrons who have signed up for Ram Restaurant's MVP club will also receive a special email alert to the promotion.

The Spice Pantry guide provides valuable information to help chefs easily pair ethnic spices, herbs, sauces, and marinades with the many species of wild Alaska Seafood. For example, the spice matrix offers 50 different herbs and spices common to Latin America, Asia and the Mediterranean. In addition, the species matrix describes flavor profiles, texture, oil content and average size. Chefs can utilize these matrices to develop hundreds of flavor combinations and new preparations for wild Alaska Seafood.
