The Culinary Institute of America (CIA) and the Alaska Seafood Marketing Institute (ASMI) have teamed up to provide a wide range of helpful tips and information for the culinary professional. The Alaska Seafood ProChef website, located online at
www.ciaprochef.com/alaskaseafood, includes an Alaska Seafood species overview with information about seasonal availability, harvesting methods, and product handling.

A new feature of this website is the Sustainability section, containing information on Alaska’s sustainable fisheries management. For many foodservice professionals, sustainability and sourcing seafood from responsible fisheries has become an important issue. This section also provides links to three information-rich downloadable materials created by the Alaska Seafood Marketing Institute: the Alaska Seafood Sustainability Brochure, Fact Sheet and Marine Protected Areas Brochure. These materials are free and quick to download.
The Alaska Seafood Spice Pantry is also included in this website. This online version includes streaming videos with CIA chefs, recipes, spice matrices and information for pairing flavors with the different Alaska Seafood species.
