Bon Appétit
The January 2006 issue of Bon Appétit magazine features the rising star of the spice world, star anise, paired with perennial star of cuisine, wild salmon. The article discusses the popularity of the star-shaped Chinese seedpod and provides recipes by Victoria Abbott Riccardi, author of Untangling My Chopsticks, including "Spicy Salmon with Tomatoes and Star Anise." Riccardi's recipe calls for "four 6-ounce wild salmon fillets with skin." In this recipe the "sweet, mellow and woodsy" spice of star anise melds with wild salmon, creating a trendy twist on an old favorite.

O, the Oprah Magazine
Oprah Winfrey teams up with registered dietitian, chef, and restaurant owner Laura Pensiero in the January edition of O, the Oprah Magazine, to send the message "Life isn't about dieting, it's about enjoying!" Pensiero offers readers a four-week plan to transform their eating habits and ten delicious recipes to ensure that they enjoy the process. The first healthy creation featured is the "Guiltless salmon burger."

In the featured story Pensiero refers to salmon as a "High quality protein" and proclaims her preference for wild salmon stating, "wild salmon ... offers health-promoting omega-3 fatty acids and has less worrisome toxins and PCBs than farmed salmon." The reason she considers wild salmon high quality protein also extends to the low-fat content of salmon: "The salmon burger contains about ten fewer grams of fat than the traditional burger" explains Pensiero. In addition to the health benefits and outstanding taste of the guiltless salmon burger, its prep-time is minimal. According to Pensiero, "You can cook one up in less than six minutes," which leaves readers plenty of time to enjoy their dinner.

Delicious Living
The January 2006 issue of Delicious Living highlights omega-3 fatty acid's long list of health benefits. The benefits include: lowers cholesterol, decreases blood pressure, protects against cardiovascular disease and acts as a natural blood thinner. Omega-3 fatty acids also help prevent or treat arthritis, diabetes, depression, certain types of cancer, skin disorders, eye diseases and menstrual pain. To obtain these healthful polyunsaturated oils, Delicious Living suggests readers "Eat wild salmon."
