Industry Bite:

Apparently it pays to make fast-food customers feel at home. According to Quick-Track, a quarterly survey by Sandelman & Associates, the average per-person check for those who ate in on their most recent occasion was $4.71 vs. $4.47 for all QSR users, a 21-quarter average shows. The same study shows Eat-in customers are more apt than all fast-food users to order side dishes, beverages and desserts. (Source: Chain Leader, August 2004)

New Study Results Affirm Purity of Alaska Seafood

Study results released by the State of Alaska this week show that fish from Alaska are remarkably free of contaminants. The study tested samples for a variety of contaminants, including heavy metals, and PCBs.

"The important thing about these study results is they reaffirm that Alaska seafood is pure and wholesome,” explains Randy Rice, Seafood Technical Director for Alaska Seafood Marketing Institute. “Alaska's medical authorities also continue to endorse unrestricted consumption of Alaska seafood citing its healthy benefits as a plus. Seafood lovers around the world can continue to enjoy this delicious and healthy protein knowing they are eating one of nature's finest foods.”

"Plate" Magazine Fall 2004 -- Two Wild Alaska Halibut Recipes

Check out the Fall 2004 issue of "Plate" magazine where two mouth-watering Wild Alaska Halibut recipes are featured:

1) Alaska Halibut steamed with banana leaf, fragrant basmati rice, spicy Hong Kong vinaigrette and cool cucumber slaw -- California Grill's, Disney's Contemporary Resort, Orlando, Fla.

2) Japanese "steamed" Alaska Halibut with Oregon wild morel and spring vegetable ragout with warm citrus-herb vinaigrette -- Executive Chef Tom Condron, Upstream Restaurant, Charlotte, N.C.

Ivar's Restaurants Promote Wild Alaska Seafood

Ivar’s seafood restaurants, a Seattle institution since 1938, recently began its Alaska Adventure promotion. Ivar’s Acres of Clams and Ivar’s Salmon House will feature Wild Alaska seafood on its menus from August 16 to September 30, 2004. At the end of the promotion, two diners will be chosen to win a weeklong Alaska Getaway cruise!

“Customers are well educated on the food they eat and where it comes from and Alaska Seafood means, wild, quality seafood from pristine waters,” notes Kirsten Wlaschin, Director of Marketing for Ivar’s. “By procuring from Alaska, we are only enhancing the finest seafood in the world through our preparations.”

Menu items include wild Alaska Salmon, King Crab, Halibut, Razor Clams, and Weathervane Scallops. Or, dig into a “Taste of Alaska” Combo Meal. Entry forms for the Alaska Getaway cruise will be accepted through September 30. The vacation giveaway is a seven-day “Alaska Glacier Bay” cruise for two.

Wild Watch: Organic Style, September 2004

For its September 2004 issue, Organic Style magazine has compiled a "Complete Guide to Fish" that educates readers on the best fish to buy at the store or in a restaurant.

After investigating some of the world's healthiest seafood harvests, theauthors find "Wild Alaskan Salmon, in season from May through September (but available year-round frozen and in cans), is best for you and the environment, and it tastes great."

Organic Style magazine is read by 3.5 million consumers.
