Alaska King Crab and Melon Soup
Ingredients to Serve-4
Soup:
Ripe Melon 1 Large
Fresh chopped ginger 2 Teaspoons
Allspice ½ Teaspoon
Sea salt ½ Teaspoon
Coconut milk ½ cup
Orange juice 1 cup
Crab
Alaska King crab meat 8 ounces
Lime juice 2 tablespoons
Asian fish sauce 1 tablespoon
Sugar 1 tablespoon
Grated coconut 2 tablespoons
Minced Jalapeno chili pepper 1 teaspoon
Cilantro, chopped 2 Tablespoons
Green onion, chopped 2 tablespoons
Freshly Toasted and crushed Cumin Seeds 1 tablespoon
Directions
Soup
1. Remove the skin and seeds from the melon. Carefully cut ¼
of the melon into a fine dice.
2. Puree the remaining melon with the ginger, allspice, salt, coconut
milk and orange juice.
3. Cover and refrigerate for atleast one hour to chill.
Crab
1. In a small bowl combine the lime juice, fish sauce and sugar blending
well.
2. Fold in the diced melon, crab meat, coconut, jalepeno, cilantro,
and green onion tossing to coat thoroughly.
3. Cover and chill until ready to serve.
To Finish:
1. Using a small strainer, drain the crab mixture. Whisk this strained
liquid into the melon soup.
2. Pour the soup into 4 chilled bowls.
3. Spoon the crab mixture into the center of each. Spinkle with crushed
cumin seeds to garnish.
