The Skinny on Fats
Good fat, good health. Fat provides energy, essential vitamins and fatty acids, and good taste. When it comes to fat, the key is to balance the different types of fat we usually eat-most from fish and vegetables, least from fried and processed foods, dairy products, and meats. Consuming more fish and vegetable fats than other fats will minimize the intake of saturated and trans fats and boost mono- and polyunsaturates. It is wise to keep all fat intake moderate. There is no advantage to diets very low or very high in fat.
